Cookin' w./ Chris: Prevent Kitchen Fires

Match ImageMy parents recently forwarded an e-mail to me that included a video instructing viewers how to react if you ever have a grease fire in your kitchen.  I quickly realized that I had absolutely NO idea how to react if this ever happened to me and I was amazed just how disasterous the effect could be if I didn't know what to do.  I know this isn't a typical Cooking With Chris article but I encourage you to view this video so that you know exactly what do do if you are ever faced with this type of situation.

Cookin' w./ Chris: Waldorfe Astoria Cake (Red Velvet Cake)

  • Red Velvet Cake1 1/2 Cups Sugar

Cooking w./ Chris: Spinach-Chicken Rolls

Spinach-Chicken Rolls4 Boneless, Skinless Chicken Breast Halves (about 1 1/4 lb. total)

1/2 of a10oz. package of Frozen, Chopped Spinach thawed and well drained

1/3 Cup of Low Fat Cottage Cheese, drained

4 oz Part-Skim Mozzarella Cheese, Shredded (1 Cup)

1 1/2 Cups Light Spaghetti Sauce with Garlic & Herbs (half of a 26-oz jar)

2Tbsp. Tomatoe Paste

6 oz. dried multigrain or whoe wheat spaghetti, cooked according to package directions and drained (optional)

Cooking With Chris: Next Day Turkey Soup

  • 2 quarts chicken broth Turkey Soup
  • 1 turkey carcass, all meat removed
  • 1 onion, halved, plus 1 onion, minced
  • 1 carrot, halved lengthwise, plus 1 carrot, minced
  • 1 whole stalk celery, plus 1 more stalk, minced
  • 2 bay leaves
  • 3 cups dark turkey meat
  • 2 garlic cloves, smashed
  • 2 tablespoons olive oil
  • 1 carrot, minced
  • 1 stalk celery, minced
  • 3 cups leftover cooked Thanksgiving side vegetables (Brussels sprouts, sweet potatoes, green beans)
  • 1 tablespoon chopped fresh sage leaves

4 C Uncooked Elbow Macaroni

5 C Milk

1/2 C +T All Purpose Flour

1 t Salt

1/4 t Freshly Ground Black Pepper

1/4 t Cayenne Pepper

2 C Grated Sharp Yellow Cheddar

2 C Grated Sharp White Cheddar

1C Freshly Grated Parmesan

20 Scallions, (white and light-green parts only, thinly sliced)

Cooking With Chris: Chicken Manicotti

Chicken Manicotti

Chicken Manicotti 1 jar (26 to 30 oz) tomato pasta sauce (your favorite variety) plus 3/4 cup of water

1 teaspoon garlic salt

1 1/2 lb. uncooked chicken breast tenders (not breaded) ~14 tenders

14 uncooked manicotti pasta shells (8oz)
